2.0 ltr head gaskets ???

hi, received a genuine elring gasket set for my a 2.0 ltr vw engine.
but there are 3 packs of head gaskets , and each pack has differant thickness head gaskets ...

how come ?

Been a long time since I rebuilt a 2.0. Are you sure that one type doesn't go under the barrel?

arent they paper gaskets that go under the barrel ? the gaskets i mentioned are all metal ? ...

oh, one other point i forgot , to the vw heads run valve stem seals ? i`ve had a look thru the gasket kit but couldnt find any ..
