Middle muffler gone

Ok, so I have had a reamus rear box for a while, but I decided I wanted some more noise from so i removed the middle muffler. It has quite a nice tone to it now but I have some questions.

What advantage does stainless steel actually give to the exhaust?

Is it because of it's ability to dissipate heat quicker? I never known why.

some peolpe claim to be able to hear a differance in sound. I put this down the fact they are compairing a crappy redback system at $200 to a full stainless X-Force system at $1300.
